Salmon filets, potatoes, and asparagus are flavoured with butter, lemon and dill and baked in parcels.

Ingredients
  

  • 4 salmon filets
  • 16 mini potatoes boiled and sliced in half
  • 2 lbs asparagus
  • 1/4 cup butter chopped into small pieces
  • 2 tablespoons dill chopped
  • 1 lemon, sliced
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350. Cut four large rectangles of aluminum foil and lay flat.
  • Place 1 salmon filet onto each foil sheet and divide potatoes and asparagus equally into each.
  • Season the fish and vegetables with salt and pepper. Top with lemon slices and dill. Sprinkle the chopped butter on top of everything.
  • Fold over the foil and roll up the edges to seal the parcels. Arrange on baking sheets and bake for 18-20 minutes or until fish is cooked through.
