Mint pesto-in a food processor pulse together the following until smooth:
1 1/2 cups mint
1/4 cup pine nuts
1 tablespoon honey
2 tablespoons olive oil
juice of 1/4 lime
Instructions
Lay out a slice of bread and spread with the mint pesto. Add the slices of cheese, spinach, prosciutto and peaches, making sure to spread evenly. Top with the other slice of bread. Butter both sides of the sandwich lightly.
Heat a pan on the stove at medium heat and add the remaining butter. Lower temperature to medium-low and place sandwich in the center of the pan. Cover pan with a lid (this will help trap the heat and ensure the cheese melts). Cook on both sides for approximately 2-3 minutes, or until it browns lightly.
