Heat 1 tablespoon olive oil in a saute pan and add shrimp. Cook on both sides for a few minutes, until cooked through. Remove from pan and set aside.
Add remaining oil to the pan and add flour. Stir to create a roux. Add milk and stir until it begins to thicken.
Add the Italian seasoning, spinach, basil, and sun-dried tomatoes. Simmer for a few minutes. Stir in Parmesan cheese. Add shrimp and simmer for a couple minutes. Serve over pasta.
