Ingredients
  

  • 1 lb shrimp large size
  • 3 tablespoons olive oil divided
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup baby spinach
  • 1/4 cup basil chopped
  • 1/4 cup sun-dried tomatoes julienned
  • 1/2 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions
 

  • Heat 1 tablespoon olive oil in a saute pan and add shrimp. Cook on both sides for a few minutes, until cooked through. Remove from pan and set aside.
  • Add remaining oil to the pan and add flour. Stir to create a roux. Add milk and stir until it begins to thicken.
  • Add the Italian seasoning, spinach, basil, and sun-dried tomatoes. Simmer for a few minutes. Stir in Parmesan cheese. Add shrimp and simmer for a couple minutes. Serve over pasta.
