Preheat oven to 400F and line a baking sheet with parchment paper.
Lay out puff pastry sheet on a lightly floured surface. Cut puff pastry sheet into 4 squares. Using a paring knife, cut a 1 cm border around each square, being careful not to cut all the way through the puff pastry. Brush the border with the egg.
Slice apples and then toss in a bowl with the lemon juice, melted butter, brown sugar and cinnamon.
Lay out apple slices on top of puff pastry, careful not to get onto the border. Drizzle with extra cinnamon mixture. Sprinkle with dried cranberries if desired.
Bake in the oven for approximately 25 minutes or until puff pastry is cooked through and a nice golden brown. Serve with a scoop of ice cream or sprinkle with icing sugar, if desired.
