Spinach and Feta Filo Triangles

These Spinach and Feta Filo Triangles (Spanakopitakia in Greek) are the perfect appetizer, snack or even light meal idea.

To make the filling, mix sauteed spinach, onion, feta, ricotta, parsley, dill and salt and pepper.

Folding the triangles is easier than it looks. To start, divide larger filo sheets into thirds. Working with one third at a time, brush it with butter.

Fold the filo in half lengthwise and then add a dollop of filling and begin to fold the filo over using a triangle fold.

Continue to fold it over onto itself in a triangle pattern. Once you reach the end, brush the filo with some butter to help seal the triangle.

Brush the entire triangle with butter on the outside and place it on a baking sheet. Repeat with remaining filo.
