This easy Boursin Chicken Orzo Bake is the perfect dump and bake dinner for busy weeknights. Place the ingredients in a baking dish and the oven does the rest. In less than an hour, you have a delicious, comforting dinner the whole family will love.
2cupschicken cooked, chopped into 1/2 inch pieces (approximately 2 small chicken breasts)
2cupscherry tomatoesor grape tomatoes
2cupsbaby spinach
2clovesgarlicminced
1teaspoon Italian seasoning
1/4teaspoonsalt
1/8teaspoonpepper
1/4teaspoonred pepper flakesoptional (if you like a bit of heat), and adjust to suit your taste
1Boursin cheese
Instructions
Preheat oven to 425F and grease a 8x13 baking dish with olive oil.
Add the orzo, chicken, broth, cherry tomatoes, spinach, garlic, and seasonings to the baking dish. Give everything a stir and then nestle the Boursin cheese into the center of the dish. Cover the baking dish with foil and then bake in the oven for 35 minutes.
Uncover and stir the pasta together. Taste and adjust seasonings. If needed, return to the oven uncovered to cook for an additional 5 minutes or until the pasta is cooked to your desired doneness and the liquid has been absorbed. *Note: If you want a creamier texture, you can stir in a little more hot broth or some heavy cream before serving.
