Preheat oven to 425F and grease a baking sheet with oil.
Scrub potatoes and then slice them into wedges.
Place the potatoes in a large bowl and add the remaining ingredients (olive oil, onion powder, paprika, oregano, salt and pepper). Toss to coat them evenly.
Transfer the potatoes to the baking dish and spread them out so that they are not overlapping. Bake in the oven for 15 minutes and then flip them and continue baking for 15 more minutes or until they are fork tender.
