This is a friendly Public Service Announcement: There is no need to stock your freezer with frozen potato wedges! Stop cramming them in there. It is so easy to make potato wedges from scratch at home and they are ready in about the same amount of time as that frozen bag!
Now, in all honesty, we used to pick up frozen wedges from our grocery store all the time. They were easy to pop in the oven when the need arose and my hubby is a huge fan of fries and wedges.
One day, when he went digging around in our deep freezer and came up empty, we decided to make them from scratch. We have not gone back since!
Making Baked Potato Wedges
Making Baked Potato Wedges at home is pretty darn easy and really takes the same amount of time as the frozen variety! You probably have all the ingredients you need at home right now and can go and make these asap!
To start, I scrub my potatoes but leave the peel on them. You can use russet potatoes or yellow potatoes. We tend to use yellow potatoes around here cause they are great for whipping and I am a huge fan of whipped potatoes.
Then you cut them up into wedges. Cut them into your desired size. I start by cutting the potato in half and then cutting those halves into about 4 pieces each, but it really depends on the size of your potatoes.
Then I place them in a bowl, drizzle them with olive oil and mix them with the seasonings. The seasonings are pretty simple and you can change them up to suit your taste. Add spice if you like or lots of herbs. That’s probably the best thing about making them from scratch. you can do what you want!
My typical seasonings (and the ones I used in this recipe) are onion powder, paprika, oregano, salt and pepper. Feel free to change things up though!
Then into the oven they go to bake for about 30 minutes, flipping them halfway through. The cooking time depends on the size of your wedges though so test them with a fork to ensure they are fork tender.

Baked Potato Wedges
Ingredients
- 1 lb russet potatoes or yellow potatoes
- 3 tablespoons olive oil
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 425F and grease a baking sheet with oil.
- Scrub potatoes and then slice them into wedges.
- Place the potatoes in a large bowl and add the remaining ingredients (olive oil, onion powder, paprika, oregano, salt and pepper). Toss to coat them evenly.
- Transfer the potatoes to the baking dish and spread them out so that they are not overlapping. Bake in the oven for 15 minutes and then flip them and continue baking for 15 more minutes or until they are fork tender.
