Crispy french fries get an extra tasty boost with the addition of feta cheese, lemon, diced tomatoes, onion and herbs! This Loaded Greek Feta Fries recipe is perfect as a side dish, appetizer, snack, or even a main course!
French fries are always a treat around here but when they are loaded up with delicious toppings, they are downright irresistible. These Loaded Greek Feta Fries are my kind of snack- full of flavor and never boring.
These loaded up french fries are full of Greek flavor from the salty feta cheese, the bright lemon juice, and herby oregano sprinkled throughout. The addition of diced tomato and red onion top off this dish and add a fresh element that brightens up the dish. It’s the perfect marriage of french fries and Greek salad! You can serve them as is, or take them up another notch by adding some Tzatziki Sauce.
We love making a meal of these Loaded Greek Feta Fries but they are great as a snack or even side dish served alongside Pork Souvlaki or Keftedakia – Greek Meatballs.
While french fries can definitely pack on the calories, we opt to make our fries homemade in the oven or air fryer. I prefer the air fryer for its speed as well as cutting down on the oil we use to cook them. I have included instructions for frying, baking and air frying so that you can choose the method you prefer. You can also sub in frozen french fries if you want a shortcut.
Ingredients in Loaded Greek Feta Fries
- Potatoes: I use russet potatoes for my french fries but you can also use Yukon gold potatoes.
- Oil: I toss my fries in olive oil before baking or air frying them. If you choose to fry your french fries, an oil that can withstand a high cooking temperature is preferable such as vegetable oil.
- Seasoning: salt and pepper.
- Herbs: dried oregano is sprinkled on the french fries. I also like to sprinkle fresh parsley on them but this is optional.
- Feta cheese: crumbled.
- Veggies: Tomato and red onion.
- Lemon juice

Tips for getting crispy french fries at home
Regardless of the cooking method you use, these tips will help ensure you end up with the crispiest french fries you can at home.
- Soak your potatoes in water. While it’s tempting to just chop up your potatoes and start cooking them immediately, this won’t result in the crispiest french fries. I soak my french fries in a large bowl of cold water for about an hour (longer if you have time). This helps to remove excess starch from the potatoes which will help them crisp up better. For the best results, don’t skip this step.
- Pat the potatoes dry. Before you cook your french fries, pat the potatoes down with a paper towel. You want to remove as much as moisture as you can.
- Don’t overcrowd your air fryer, baking tray, or frying pan. A crowded pan will result in moisture getting trapped. In order for your fries to crisp up, make sure they have some room.
- Cook them on high heat. If you cook them too low, they won’t crisp up.
- Make them just before you intend to eat them. It’s no secret that potatoes left sitting around start to get soft. Making them just before you intend to serve them means they will be their crispiest.
How to prepare homemade french fries
As mentioned earlier, the recipe card at the end of this post includes instructions for three different cooking methods. You can fry your french fries, bake them in the oven, or air fry them. While I usually opt for the air fry method myself, I have used all three methods before. Feel free to choose your favourite.
1. Slice the potatoes: Slice potatoes into 1/4 inch slices. Place the potatoes into a bowl filled with water and let them sit for 1 hour.
2. Dry them: Drain the fries and pat them dry with a paper towel.
3. Season them (if you are baking or air frying): Place the fries in a bowl and drizzle them with the olive oil. Season them with salt and pepper. [Skip this step if you are frying your french fries. You can simply fry them and then season them after they are fried instead.]
4. Cook them: To cook the french fries, you can fry them, bake them or air fry them.
- To fry: Heat oil in a deep fryer or a dutch oven and then add the french fries carefully to the hot oil (a slotted metal spoon helps). You will likely need to cook them in batches. Allow the fries to cook in the oil until they are cooked through. The cook time will depend on the thickness of your french fries (usually between 7-10 minutes). Use a slotted spoon to remove them and place them on a plate lined with paper towel to absorb the excess oil. Season them immediately.
- To bake: Spread the fries onto a parchment lined baking sheet. If they do not fit on one, use two baking sheets. Bake in a preheated oven at 425F for 15 minutes, then flip them and continue baking until they are tender.
- To air fry: Transfer them to the preheated air fryer at 375F and cook for 13-15 minutes, shaking the basket about half way through cooking. [Photos for this method below.]
Assemble the Loaded Greek Feta Fries
1. Transfer the french fries on a platter and sprinkle them with oregano.
2. Top the fries with crumbled feta, chopped tomatoes and red onion. Squeeze a little lemon juice on top and serve. Optional: sprinkle with fresh parsley before serving.
What to serve with Loaded Greek Feta Fries
These fries are delicious as a meal on their own, especially served with some Tzatziki Sauce and a Traditional Greek Salad.
