This simple, herby and healthy Chicken Kofta Kebabs recipe makes the perfect, easy dinner! Made with ground chicken or sub in ground turkey instead!
It has been a long time since I have enjoyed a chicken kofta kebab and I was eager to rectify the situation this week! They are easy to make and delicious, making them the perfect light dinner option.
We have been on a (temporary) low carb-kick after overindulging for a bit too long (quarantine anti-diet!) so these kebabs fit right into our healthy dinner plans for the week! We served them up with a Greek salad and they were perfection!
There are so many different ways to enjoy these kofta that are popular in so many countries, particularly in the middle east and south Asia. It is essentially a meatball-type mixture that can be cooked as is or put onto skewers, like I did. The mixture almost always includes lots of herbs and spices but the quantities and types can differ depending on the country of origin and personal preferences, really.
I based my kofta recipe off of my turkey meatball recipe but added more herbs and spices like cumin and coriander to it to get a more middle-eastern and Greek flavour. I served it with tzatziki (for my hubby) and a garlic-free yogurt sauce for me. With a Greek salad it was the perfect low-carb dinner!
How to make Chicken Kofta Kebabs
These kebabs are pretty darn easy to put together- just mix it all up in a bowl and form into kebabs! To make it, you will need:
- 1 lb ground turkey
- 2 eggs
- 1/2 cup bread crumbs
- 1/2 onion, finely chopped
- 1 tablespoon olive oil
- 3 tablespoons fresh parsley, finely chopped
- 2 tablespoon fresh oregano, finely chopped
- 1 tablespoons fresh mint, finely chopped
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- salt and pepper
- olive oil, to brush on hands when forming kofta
- 8 wooden skewers, soaked in water (at least 30 minutes)
To start, you will need to soak wooden skewers in water for at least 30 minutes. Then, preheat your oven to 400F and line a baking sheet with parchment paper.
Finely chop the herbs and onion. You can do this by hand or in a food processor. Mix all the chicken kofta ingredients in a large bowl until well combined.
Place olive oil in a small dish. Lightly grease your hands with the olive oil (you will likely need to re-grease them as you work). Divide mixture into 8 portions (approximately 3 tablespoon portions- I use an ice cream scoop to do this). With greased hands, form the chicken mixture into sausage-shaped logs. Slide onto a skewer. Repeat with the remaining mixture.
Place kofta on the baking sheet and bake in the oven for approximately 25-30 minutes or until cooked through. Alternatively, you can grill the kofta – be sure to brush the grill well with oil to prevent sticking and your kofta falling apart.
