Simple Roasted Butternut Squash

Simple and delicious roasted butternut squash is an easy recipe that bakes up in the oven and requires only 3 ingredients! Serve it as a simple, healthy side dish, toss it into salads or pasta dishes, or use it in a soup!

Is anyone else as obsessed with squash as I am? Butternut, acorn, pumpkin, or delicata squash. You name it, I am probably currently eating it. I have been eating so much squash its a wonder I haven’t turned orange yet! It probably wouldn’t stop me from eating more if I did though!

On the menu tonight is this Simple (and delicious) Roasted Butternut Squash. It’s one of the easiest ways to prepare squash and one of my favourites! Butternut squash is so deliciously creamy and flavourful it really doesn’t need much. I generously toss it in olive oil and season it with salt and pepper. Pop it in the oven and voila! A delicious side dish is ready to go. It really is the easiest way to prepare it and it doesn’t disappoint!

I usually double the recipe and use the leftovers to throw into my salads or breakfasts. You could also use the leftovers to make a delicious squash soup. Roasting the squash first brings out so much flavour and takes squash soup to the next level!

How to make simple roasted butternut squash

To make this easy recipe, you will need just 3 ingredients! Just:

  • 1 butternut squash
  • 2 tablespoons olive oil
  • salt and pepper

Preheat oven to 400F.

Peel and chop the butternut squash into 1 inch cubes. Place onto a baking sheet and drizzle with the olive oil. Season with salt and pepper and roast in the oven for approximately 35 minutes or until the squash is fork tender. Be sure to check on the squash after 20 minutes of cooking and flip the cubes.

That is literally it! So simple, but such a delicious side dish!

Other uses for roasted squash

While this makes a great side dish and is one we eat often throughout the fall and winter months, roasted squash can be used to whip up all sorts of dishes!
