Note: If you wish to make this soup gluten free, omit the flour and butter roux. Instead, ladle a couple of cups of broth into a saucepan and heat over medium heat. Meanwhile in a cup add 2 tablespoons cornstarch to about 1/4 cup of milk and stir to create a slurry. Add the slurry to the saucepan and stir it into the broth until it begins to thicken. Once thickened, transfer it back to the slow cooker.
