1 1/2 teaspoons instant espresso powder(used to enhance the chocolate flavor. Can be omitted if caffeine is an issue).
1 1/2 cups sugar
2 largeeggs
1 teaspoon vanilla extract
1cupchocolate chips
Instructions
Preheat oven to 350F and line a 9x9 baking dish with parchment paper.
In a large bowl, add the flour, salt, and baking powder. Set aside.
In a medium saucepan, add the butter, espresso powder, and cocoa powder. Melt the butter and simultaneously whisk together with the other ingredients over medium heat. Once the butter is melted, add the sugar and stir in. Remove from heat and let it cool for a few minutes.
In a stand mixer (or mixing bowl with a hand mixer), add the saucepan ingredients. With the mixer running at medium speed, add the vanilla extract and eggs one at a time. Slowly add the dry ingredients and stop the mixer as soon as they are incorporated. Fold the chocolate chips into the batter.
Spread the batter into the lined baking dish using an offset spatula (the batter is thick and will need to be spread with a spatula). Bake for 25-27 minutes or until the edges are firm and the center is set. Let the brownies cool before slicing.
