Brownies are one of those treats that everyone loves (I mean, are there people who don’t like brownies??) This chocolatey and decadent treat is easy to make, loved by all and made with common ingredients you probably already have on hand. No need to reach for a boxed mix. It’s super easy to make these brownies from scratch!

Fudgy/Chewy vs. Cakey Brownies

When it comes to brownies the people are divided. There are those who like a fudgy brownie, and those who prefer cake-like ones. There is nothing wrong with either, as far as I am concerned. I mean, wherever chocolate is involved, its all good in my books! That said, I definitely lean towards a fudgy, chewy brownie. I like the crispy edges, contrasted by a gooey center and really can’t resist going in for another fudgy bite!

As written, this brownie recipe produces a fudgy brownie, but if you like cakey brownies, don’t turn away just yet. There are a couple easy adjustments you can do to make the cakey texture you desire.

So what’s the secret to turning this fudgy brownie into a cakey one? No need to adjust the flour or butter rations here. Just switch up the number of eggs in the recipe. By adding one more egg to the batter, you can totally change the texture of brownies. You will also need to cook the brownies longer (about 10 minutes longer) when done this way. That is it! That makes the difference between fudgy brownies and cakey brownies. So simple right?

All this talk about brownies (especially the fudgy kind) is making me crave them all over again (and I literally just ate one). Enough talk, let’s get baking!

How to make Homemade Brownies

To make the best homemade brownies, you will need:

  • 1 cup + 2 tablespoons flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter
  • 1/2 cup oil
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons instant espresso powder
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preheat oven to 350F and line a 9×9 baking dish with parchment paper.

In a large bowl, add the flour, salt, and baking powder. Set aside.

In a medium saucepan, add the butter, oil, espresso powder, and cocoa powder. Melt the butter and simultaneously whisk together with the other ingredients over medium heat. Once the butter is melted, add the sugar and stir in. Remove from heat and let it cool for a few minutes.

In a stand mixer (or mixing bowl with a hand mixer), add the saucepan ingredients. With the mixer running at medium speed, add the eggs one at a time. Slowly add the dry ingredients and stop the mixer as soon as they are incorporated (careful not to overmix).

Pour the batter into the lined baking dish. Bake for 25-27 minutes or until the edges are firm and the center is set. Let the brownies cool before slicing.
