Healthy Strawberry Banana Muffins are tender, loaded with fruit, and perfect for kids and adults alike! This 30 minute recipe uses simple ingredients, including fresh or frozen strawberries, and can be whipped up in just 30 minutes.
2 largeeggswhisked (substitute flax eggs instead for a vegan option. See notes below)
2 bananas mashed
1/4 cup butter or coconut oil, melted
1/2cup honey or maple syrup
1/4 cup milk of choice
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
2 cups flour (oat, all purpose or whole wheat)
1 1/2 cups strawberries
Instructions
Preheat oven to 350F and add muffin liners to a 12 cup muffin tin.
In a large mixing bowl, mix together the eggs, mashed bananas, butter, honey, milk, and vanilla extract.
Add the cinnamon, salt, baking soda, and baking powder to the wet ingredients. Slowly add the flour and mix until everything is incorporated.
Add strawberries to the batter and gently fold them into the mixture.
Scoop the batter into the prepared muffin tin, filling the muffin cups about 3/4 full. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove from oven and let cool in tin for 5 minutes. Gently remove muffins from tin and place them on a cooling rack to cool completely.
Notes
To make 2 flax eggs, mix 2 tablespoons ground flaxmeal with 5 tablespoons water. Stir and let sit for a few minutes to thicken.
