This healthy Sweet potato soup is given an extra kick of flavor with the addition of chili and lime. This ultra creamy Sweet Potato, Chili, & Lime Soup is so easy to make, nourishing, and loaded with delicious flavor. It can easily be made vegan as well.
1/2 cup sour cream or Greek yogurt (replace with coconut yogurt for vegan option)
Instructions
In a large pot, add oil, sweet potatoes and chili powder. Saute for a couple of minutes on medium heat.
Add the vegetable stock and thyme and increase heat to high. Bring the soup to a boil and allow it to cook until the potatoes are tender. Remove from heat and remove thyme sprig. Let the soup cool.
Meanwhile, mix lime juice and zest with sour cream or yogurt. Set aside.
When the soup has cooled, add it to a food processor and pulse until smooth. You may need to do this in batches depending on the size of your food processor. [If you have a stick blender, you can do this directly in the pot.]
Return the pureed soup to the pot and warm through. If the soup is thick, add more stock or water to thin it out to the desired consistency. Season with salt to taste.
Ladle soup into bowls and top the soup with a dollop of the lime sour cream or yogurt before serving.

Note: if you like a stronger lime flavour, add more lime juice directly into the soup.
