Loaded Greek Feta Fries

Crispy french fries get an extra tasty boost with the addition of feta cheese, lemon, diced tomatoes, onion and herbs! This delicious recipe is perfect as a side dish, appetizer, snack, or even a main course!

Ingredients
  

  • 4 medium russet potatoes (can also substitute yukon gold potatoes)
  • 3 tablespoons olive oil
  • salt and pepper
  • 1 teaspoon dried oregano
  • 3/4 cup feta cheese crumbled
  • 1 large tomatoes chopped
  • 1 small red onion chopped (or 1/2 a large onion)
  • 1/2 lemon juiced
  • fresh parsley for garnish (optional)
  • oil for frying (if you use the frying method)

Instructions
 

  • Slice potatoes into 1/4 inch slices. Place the potatoes into a bowl filled with water and let them sit for 1 hour.
  • Drain the fries and pat them dry with a paper towel.
  • Place the fries in a bowl and drizzle them with the olive oil. Season them with salt and pepper. [Skip this step if you are frying your french fries. You can simply fry them and then season them after they are fried instead.]
  • To cook the french fries, you can fry them, bake them or air fry them.
    To fry: Heat oil in a deep fryer or a dutch oven and then add the french fries carefully to the hot oil (a slotted metal spoon helps). You will likely need to cook them in batches. Allow the fries to cook in the oil until they are cooked through. The cook time will depend on the thickness of your french fries (usually between 7-10 minutes). Use a slotted spoon to remove them and place them on a plate lined with paper towel to absorb the excess oil. Season them immediately.
    To bake: Spread the fries onto a parchment lined baking sheet. If they do not fit on one, use two baking sheets. Bake in a preheated oven at 425F for 15 minutes, then flip them and continue baking until they are tender.
    To air fry: Transfer them to the preheated air fryer at 375F and cook for 13-15 minutes, shaking the basket about half way through cooking.
  • Transfer the french fries on a platter and sprinkle them with oregano.
  • Top the fries with crumbled feta, chopped tomatoes and red onion. Squeeze a little lemon juice on top and serve. Optional: sprinkle with fresh parsley before serving.
