1 1/2 cups sugar
1teaspoonvanilla extract
2 large eggs
1cupchocolate chips
24 oreos
Instructions
Preheat oven to 350F and line a 9x9 baking dish with parchment paper.
In a large bowl, add the flour, salt, and baking powder. Set aside.
In a medium saucepan, add the butter, espresso powder, and cocoa powder. Melt the butter and simultaneously whisk together with the other ingredients over medium heat. Once the butter is melted, add the sugar and stir in. Remove from heat and let it cool for a few minutes.
In a stand mixer (or mixing bowl with a hand mixer), add the saucepan ingredients. With the mixer running at medium speed, add the vanilla extract and eggs, one at a time. Slowly add the dry ingredients and stop the mixer as soon as they are incorporated (careful not to over-mix). Fold in the chocolate chips using a spatula.
Pour half of the batter into the lined baking dish. Top it with Oreos in a single layer (about 16 Oreos). Add the remaining batter on top. Roughly chop the remaining oreos and sprinkle on top of the brownie batter.
Bake for 25-27 minutes or until the edges are firm and the center is set. Let the brownies cool before slicing.
