Baked Gnocchi

This vegetarian oven-baked gnocchi recipe is super cheesy and oh-so-satisfying! It's super simple and ready in just 20 minutes too!

Ingredients
  

  • 1 teaspoon olive oil
  • 500 g gnocchi
  • 2 cups tomato sauce
  • 1 cup fresh spinach chopped
  • 1 cup cherry tomatoes
  • 200 g fresh mozzarella cheese sliced or 2 cups shredded mozzarella
  • fresh basil, to serve

Instructions
 

  • Preheat oven to 350F and lightly grease a baking dish with olive oil.
  • Bring a pot of water to a boil and boil the gnocchi according to package directions.
  • Add half the tomato sauce to the baking dish. Add the gnocchi and sprinkle with the cherry tomatoes and spinach. Add the remaining sauce over it all.
  • Top with the sliced mozzarella cheese and bake in the oven for approximately 12-14 minutes or until the cheese is melted. Garnish with fresh basil and serve.
