This vegetarian oven-baked gnocchi recipe is super cheesy and oh-so-satisfying! It’s super simple and ready in just 20 minutes too!
Is there anything more satisfying than a delicious gnocchi dish? I am absolutely obsessed with gnocchi of all kinds! They are pillowy little bites of heaven! Just YUM!
I do love a good gnocchi dish and homemade gnocchi is much better than store-bought but I went with the store-bought variety for this recipe. The reason? I needed a super simple and quick dinner recipe! There is nothing wrong with taking a shortcut every now and then. Sure, homemade pasta is better than anything out of a box, but who doesn’t have a pantry stocked with pasta at all times? There is no such thing as bad pasta in my opinion and that it also true when talking about gnocchi. It’s all good!
Everyone needs some good quick recipes and this is one of mine! The best part? We always have what we need on hand! Packages of gnocchi are always on hand here (cause we love em!) and we have enough jars of tomato sauce to supply the whole neighbourhood if needed! Add some herbs (I used fresh but dried will do in a pinch) and cheese and voila! Dinner is served! I added in a few handfuls of fresh cherry tomatoes and spinach to make it healthier and justify that second helping, but you could also do without them if you don’t have it on hand. Dinner will be just as delish!
How to make Baked Gnocchi
To make this dish, you will need:
- 1 teaspoon olive oil
- 1 package gnocchi (about 500g)
- 2 cups tomato sauce
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes
- a ball fresh mozzarella cheese, sliced (about 200g) or 2 cups shredded mozzarella
- fresh basil, to serve
Preheat oven to 350F and lightly grease a baking dish with olive oil.
Bring a pot of water to a boil and boil the gnocchi according to package directions.
Add half the tomato sauce to the baking dish. Add the gnocchi and sprinkle with the cherry tomatoes and spinach. Pour the remaining sauce over it all.
Top with the sliced mozzarella cheese and bake in the oven for approximately 12-14 minutes or until the cheese is melted. Garnish with fresh basil and serve.
And just like that, dinner is served in just 20 minutes! 20 minutes! How awesome is that?!
