This Easy Pumpkin Bread recipe is moist, delicious and super easy to make! It comes together in one bowl, making for a super simple clean up too!
If you know me and have been following my blog, you probably already know about my pumpkin obsession by now! It runs deep and I truly could eat pumpkin goodies, both sweet and savoury, every single day of this season without getting sick of it. I live for it!
It shouldn’t be all that surprising to see a pumpkin bread on this site then. I take my pumpkin baked goodies pretty seriously around here, so rest assured that this one has been tried and tested numerous times before I published it on this site. It’s a tough job, but someone has got to do it! I am happy to take one for the team. Haha! Seriously, though, this pumpkin bread is a favourite recipe around here and something I absolutely adore!
Did I mention that it is all mixed up in one bowl? I tend to make many of my recipes in one bowl cause who wants to have to deal with a pile of dirty dishes when they are done baking? I love being in the kitchen and making the mess but not cleaning it. So one bowl recipes are where its at! Whose with me?
How to make Easy Pumpkin Bread
To make this recipe, you will need:
Wet ingredients
- 1 1/2 cups pureed pumpkin
- 2 eggs, whisked
- 1/2 cup butter or coconut oil, melted
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 3/4 cups all purpose flour
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 teaspoons baking soda
- 1 1/2 tablespoons Pumpkin Pie Spice
- 1 tablespoon cinnamon
- pinch of salt
Seed topping
- 1/2 cup pumpkin seeds
- 1/4 cup sunflower seeds
Preheat oven to 350F and line a loaf pan with parchment paper or grease it generously with butter.
In a large bowl, add the wet ingredients and mix to combine. Add the dry ingredients and mix well to form batter.
Transfer to the loaf pan and use a spatula to spread the batter evenly. Sprinkle with the seeds. Bake for 55-65 minutes or until a toothpick inserted in the center of the loaf comes out clean.
Let it cool for 5 minutes in the pan, then remove bread and transfer to a cooling rack to cool completely before slicing.
