It’s no secret I’m more than a little obsessed with pumpkin! Savoury and sweet pumpkin recipes have been on regular rotation in our house for quite some time. It was only a matter of time before I baked it up into muffins. A quick search on my blog and you’ll see we love our muffins around here too!

We love a good muffin for breakfast around here, but a healthy one is even better! I make these babies with coconut oil for a healthier twist and they are loaded with healthy pumpkin puree! I sweetened these with some honey although I did add a bit of brown sugar too. The end result is a moist, delicious treat that I feel good about eating!

Why pumpkin is so good for you

Pumpkin is part of the squash family and there isn’t a squash I’ve met that I didn’t like! It is technically a fruit as it is filled with seeds, although it often treated like a vegetable. It can be used as a nutritious ingredient into both sweet and savoury dishes.

Among its many health benefits, pumpkin is particularly known for being a good source of Vitamin A. As a result, it is linked to promoting good eye health as well as a host of other benefits including supporting a healthy immune system and skin care.

Pumpkin is also high in antioxidants which can prevent cell damage and lower our risk of cancer.

On top of all the nutrients it provides us, it is also relatively low in calories too which makes it a great addition to a healthy diet!

How to make Healthy Pumpkin Chocolate Chunk Muffins

To make these muffins, you will need:

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 1/2 cup coconut oil or butter, melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1/2 teaspoon salt
  • 1 2/3 cup flour
  • 1 1/4 cup chocolate chunks, divided
  • 2 tablespoons pumpkin seeds

Preheat oven to 325F and line a 12 cup muffin pan with liners.

In a large bowl, mix pumpkin puree, eggs, honey, brown sugar, coconut oil or butter, milk, and vanilla extract until well combined. Stir in baking powder, baking soda, pumpkin spice and salt. Slowly add the flour, stirring until thick batter forms. Add 1 cup of chocolate chunks and mix.

Scoop batter into the muffin pan. Top with remaining 1/4 cup chocolate chunks and pumpkin seeds. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
