  • 5-6 yellow or russet potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons onion powder
  • 1 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • pepper to taste


  • Preheat oven to 425F. Line a baking sheet with parchment paper.
  • Chop potatoes into 3/4" inch cubes and place in a bowl. Add oil and seasoning and toss to combine.
  • Spread potatoes onto a baking sheet and bake for 35 minutes or until they are easily pierced with a fork.
