These Baked Home Fries are a healthier addition to your breakfast! Seasoned to perfection and super easy to make, this simple potato dish has all the flavour you’re looking for without all the grease!

Home fries are a well-loved breakfast side dish but they are usually fried up and greasy. This baked version is all the delicious flavour you want from this classic side dish but baked up in the oven instead!

You cut the grease without sacrificing flavour!

Best of all, this dish only requires 5 minutes of hands-on time. Then the oven does the work, freeing you up to make the rest of your meal!

I love taking shortcuts like this. While the total cook time for baked home fries is longer than frying them up, it doesn’t take long at all and doesn’t require you standing over a hot frying pan! To me, that’s a shortcut, since it frees me up to do other things with my time!

Ingredients needed for Baked Home Fries

  • Yellow or russet potatoes

  • Olive oil

  • Seasoning: onion powder, paprika, thyme salt and pepper.

How to make Baked Home Fries

  1. Preheat oven to 425F. Line a baking sheet with parchment paper.

  2. Chop potatoes into 3/4″ inch cubes and place in a bowl. Add oil and seasoning and toss to combine.

  3. Spread potatoes onto a baking sheet and bake for 35 minutes or until they are easily pierced with a fork.

Can you prep Baked Home Fries in advance?

It’ll be no surprise that freshly baked home fries are always the best option. In order to enjoy these freshly baked while still minimizing the workload in the morning, I recommend prepping your potatoes the night before.

The (uncooked) potatoes can be washed, chopped and then stored in a bowl full of cold water in the refrigerator overnight. The potatoes should be fully submerged in the cold bowl of water, with an extra inch of water over them.

In the morning, drain the potatoes well and pat them dry. Then season and bake them as described in the recipe.

Storing leftover Baked Home Fries and reheating them

Once cooled, leftover home fries can be stored in an airtight container in the fridge for a couple of days.

To reheat them, place the potatoes on a baking tray lined with parchment paper and bake in the oven at 350F until they are heated through. Alternatively, you can heat them up in a frying pan with just a small amount of heated olive oil.
