Sesame Peanut Noodles

Fresh veggies and noodles are tossed in a sesame peanut sauce to make a delicious dish. This Sesame Peanut Noodles dish comes together in less than 20 minutes and is great served warm or cold.

Sesame Peanut Noodles are one of those dishes that I love pulling out when the craving hits. Not only does it satisfy that noodle craving, but the leftovers are absolutely perfect for make ahead lunches.

This recipe can be made with pretty much any kind of noodles you have on hand which is perfect for tossing together last minute. Depending on the noodles you use, it can be made gluten-free as well.

It also takes just 20 minutes to make! Love a quick recipe!

The best part about this dish is the sauce. It’s nutty, salty (from the soy sauce) and slightly sweet (thanks to some honey). A little lime juice gives a hint of citrus that makes the taste buds sing.

This recipe is easily adaptable too. Besides swapping in whatever noodles you have handy, you can also change up the veggies too to use up what you’ve got.

You can serve it as a main dish or a side dish, warm or cold. However you enjoy it, it’s sure to satisfy.

Ingredients in Sesame Peanut Noodles

  • Noodles: rice noodles, ramen, soba noodles, or similar. If you don’t have any of these on hand, you can even substitute spaghetti or linguine.

  • Peanut butter: Creamy peanut butter.

  • Sauce ingredients: Soy sauce, sesame oil, honey, rice vinegar, lime juice, sriracha.

  • Ginger: Freshly grated ginger offers the best flavor to the noodles but if you don’t have any on hand, you can use a little ground ginger.

  • Veggies: Carrots and red bell pepper. You can easily substitute for veggies you have on hand. I like adding spiralized zucchini, for example. Snap peas, cabbage, or edamame make great options as well. If you prefer, you can omit the veggies altogether as well.

  • Peanuts: chopped. I love adding chopped peanuts for added crunch.

  • Garnish: green onion, cilantro, sesame seeds, lime wedges.

How to make Sesame Peanut Noodles

  1. Cook noodles. Bring a pot of water to a boil and cook the noodles according to package directions. Reserve some of the water and then drain the noodles.

  2. Make the sauce. Meanwhile, mix the peanut butter, lime juice, soy sauce, sesame oil, honey, rice vinegar, grated ginger, and sriracha in a bowl to create the sauce.

  3. Toss the noodles and sauce together. In a large pot over medium-low heat, add the noodles, carrots, peppers, peanuts and the sauce, tossing to coat the noodles. Heat the noodles and sauce together, stirring often for a couple of minutes. If needed, add some of the reserved noodle water to create a smooth sauce to coat the noodles. Remove from heat.

  4. Garnish and serve. Portion noodles into serving bowls and garnish with green onions and sesame seeds. Serve with lime wedges.

Storing leftovers

Once cooled, sesame peanut noodles can be transferred to an airtight container and stored in the fridge.

You can opt to reheat the noodles when you wish to enjoy the leftovers or you can enjoy them cold out of the fridge. Cold noodles make a great lunch!

If you are reheating, I recommend adding the noodles to a saucepan and adding a little water while reheating over medium heat.

What to serve the noodles with

This noodle dish is often served on its own, as is. You can also add to the dish itself by adding a protein like chicken, shrimp, or even tofu.

  • 250 g noodles rice noodles, ramen, soba noodles, or similar.
  • 1/4 cup creamy peanut butter
  • 1/2 lime juiced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon freshly grated ginger or 1/4 teaspoon ground ginger
  • 1 teaspoon sriracha (or more if you like more heat)
  • 1 cup carrots thinly sliced or shredded

  • 1/4 cup peanuts chopped
