Soba Noodle Salad with Honey Sesame Dressing

Wherever there are noodles involved, I am there! Any noodle dish, made anyway. Here. For. It. This noodle salad is no exception! Its delicious, healthy and so pretty too! And did I mention how easy it is to make? You can bet I already have plans to make this soon!

Soba noodles are the base for this salad and they are a lovely, healthy noodle option! Soba noodles are Japanese noodles made from buckwheat and are high in fiber and can be eaten warm or cold, like in this cold salad.

Fresh crisp veggies are added to the soba noodles in this dish and then coated in a Honey Sesame Dressing. I love this dressing. Love! It’s kinda sweet, kinda savoury and super delicious!

How to make Soba Noodle Salad with Honey Sesame Dressing

To make this Soba Noodle Salad, you will need:

  • 1 230g package soba noodles
  • 1 head radicchio, chopped
  • 3 green onions, chopped finely
  • 1 cup shredded carrots
  • 4 tablespoons each tahini, sesame oil, and honey
  • 2 tablespoons each soy sauce, rice vinegar and black sesame seeds
  • salt and pepper to taste

To start, boil the soba noodles according to package directions. Drain.

Meanwhile, to make the dressing, mix tahini, sesame oil, honey, soy sauce, and rice vinegar to a small bowl and mix to combine.

Add the radicchio, carrots and onions to a large bowl. Add the soba noodles and sesame seed and pour the dressing on top and toss them together. Salt and pepper to taste and voila! You have a delicious salad!
