Sesame Peanut Noodles

Fresh veggies and noodles are tossed in a sesame peanut sauce to make a delicious dish. This Sesame Peanut Noodles dish comes together in less than 20 minutes and is great served warm or cold.

Ingredients
 
 

  • 250 g noodles rice noodles, ramen, soba noodles, or similar.
  • 1/4 cup creamy peanut butter
  • 1/2 lime juiced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon freshly grated ginger or 1/4 teaspoon ground ginger
  • 1 teaspoon sriracha (or more if you like more heat)
  • 1 cup carrots thinly sliced or shredded
  • 1 red pepper thinly sliced
  • 1/4 cup peanuts chopped
  • 3 green onions thinly sliced, to garnish
  • 2 tablespoons cilantro , to garnish
  • 1 tablespoon sesame seeds , to garnish
  • lime wedges , for serving

Instructions
 

  • Bring a pot of water to a boil and cook the noodles according to package directions. Reserve some of the water and then drain the noodles.
  • Meanwhile, mix the peanut butter, lime juice, soy sauce, sesame oil, honey, rice vinegar, grated ginger, and sriracha in a bowl to create the sauce.
  • In a large pot over medium-low heat, add the noodles, carrots, peppers, peanuts and the sauce, tossing to coat the noodles. If needed, add some of the reserved noodle water to create a smooth sauce to coat the noodles.
  • Portion noodles into serving bowls and garnish with green onions and sesame seeds. Serve with lime wedges.
