Fresh veggies and noodles are tossed in a sesame peanut sauce to make a delicious dish. This Sesame Peanut Noodles dish comes together in less than 20 minutes and is great served warm or cold.
1 teaspoon sriracha (or more if you like more heat)
1 cup carrotsthinly sliced or shredded
1red pepperthinly sliced
1/4 cup peanutschopped
3green onionsthinly sliced, to garnish
2tablespoonscilantro, to garnish
1 tablespoon sesame seeds, to garnish
lime wedges, for serving
Instructions
Bring a pot of water to a boil and cook the noodles according to package directions. Reserve some of the water and then drain the noodles.
Meanwhile, mix the peanut butter, lime juice, soy sauce, sesame oil, honey, rice vinegar, grated ginger, and sriracha in a bowl to create the sauce.
In a large pot over medium-low heat, add the noodles, carrots, peppers, peanuts and the sauce, tossing to coat the noodles. If needed, add some of the reserved noodle water to create a smooth sauce to coat the noodles.
Portion noodles into serving bowls and garnish with green onions and sesame seeds. Serve with lime wedges.
