Zucchini Waffles

Ingredients
 
 

  • 1 1/2 cups oats gluten-free, if required
  • 3/4 cup milk of choice
  • 1/4 cup melted coconut oil or melted butter
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup grated zucchini water squeezed out
  • 1/2 cup chocolate chips (optional)

Instructions
 

  • Add all of the waffle ingredients to a blender except for the zucchini and chocolate chips, and blend until a smooth batter forms.
  • Stir in the grated zucchini and chocolate chips. Let the batter sit for 10 minutes. [Note: The batter is thin and if you are using chocolate chips, they may sink to the bottom of the mixing bowl. Be sure to scoop up batter from the bottom of the bowl when making your waffles or, alternatively, do not mix the chocolate chips in the batter and sprinkle them when pouring batter into your waffle iron instead.]
  • Heat waffle iron on medium heat and pour batter into the center of the iron (as much batter as your waffle iron requires), close the lid and cook them for as long as your waffle iron requires. [Note: Read your waffle maker manual to see the recommendations for batter quantity and cook times.]
