Dust off that waffle iron and get ready to start the day with these soft and fluffy Zucchini Waffles! These delicious waffles are made with wholesome ingredients like zucchini and oats, are refined sugar free, and whip up in a blender for an easy and healthy breakfast.
Zucchini is one of those versatile vegetables that adds loads of nutrients and flavor to mains, sides, breakfasts, and desserts. If, like me, you are a fan of this delicious summer vegetable, you probably find all the ways to incorporate it into your everyday meals.
Even if you aren’t a huge fan of zucchini, there are so many ways to use this vegetable to add a healthy twist to your dishes without even tasting it. These healthy Zucchini Waffles do exactly that! You get all the nutrients and, although you can see little specks of green in your waffles, the end result tastes just like a traditional American-style waffle with hints of sweet vanilla flavor. Pro tip: if you want to hide the zucchini from picky eaters, you can just peel it first to remove the dark green exterior and then it goes undetected!

These zucchini packed waffles are ultra soft and fluffy on the outside. They are also loaded with wholesome ingredients and a touch of maple syrup for sweetness. I personally love to add dark chocolate chips to my batter, but that is optional. In our house, my husband and daughter insist on them, though.
This super easy blender waffle recipe is made frequently in our home, as is it’s cheesy counterpart, my Savory Zucchini Waffles.

Ingredients in Zucchini Waffles
- Oats: gluten-free, if required. You can use rolled oats or even quick cooking oats for this recipe.
- Milk: Dairy or non-dairy milk can be used for this.
- Melted coconut oil or melted butter: If you wish to make these dairy-free, coconut oil works great for this waffle recipe.
- Eggs.
- Maple syrup: a bit of maple syrup adds a hint of sweetness to the waffles.
- Vanilla extract: flavors the batter.
- Leavener: baking powder.
- Spices and seasoning: A touch of salt enhances flavor and some ground cinnamon adds some flavor to the batter.
- Zucchini: grated and water squeezed out.
- Chocolate chips: optional. Other optional mix-ins include chopped nuts or blueberries.

How to Make Zucchini Waffles
- Blend the batter. Add all of the waffle ingredients to a blender except for the zucchini and chocolate chips, and blend until a smooth batter forms.
- Stir in zucchini. Stir in the grated zucchini and chocolate chips. Let the batter sit for 10 minutes. [Note: The batter is thin and if you are using chocolate chips, they may sink to the bottom of the mixing bowl. Be sure to scoop up batter from the bottom of the bowl when making your waffles or, alternatively, do not mix the chocolate chips in the batter and sprinkle them when pouring batter into your waffle iron instead.]
- Cook waffles. Heat waffle iron on medium heat and pour batter into the center of the iron (as much batter as your waffle iron requires), close the lid and cook them for as long as your waffle iron requires. [Note: Read your waffle maker manual to see the recommendations for batter quantity and cook times.]


Storing and reheating waffles
Once cooled completely, waffles can be stored in an airtight container in the fridge for a couple of days. For longer storage, waffles can be frozen (see below for instructions).
To reheat waffles, I usually warm them in a toaster on low heat. Alternatively, you can heat them in the oven at 375F until heated through.
How to freeze waffles
Once your waffles have cooled, you can place them in a freezer bag or freezer safe container. I like to place pieces of parchment between the waffles to prevent sticking. Waffles will keep in the freezer for a few months.
We always have a freezer stash of zucchini waffles on hand for quick morning breakfasts.
