Chewy Chocolate Chip Granola Bars

Delicious, chewy chocolate chip granola bars made right in your own home, without any preservatives! So easy to make and much healthier for you, you’ll never feel the need to buy them again!

These granola bars may look like the ones you buy at the store, but they are so much better! Made with healthy ingredients and deliciously chewy and soft, not dry. So yummy! They are like a soft rice krispie almost!

They are not only deliciously gooey, they are super simple to make with easy to find ingredients! Did I mention they are also pretty darn economical too? Cause they are!

If you have not tried making your own granola bars, you’ll be surprised at just how easy it is to do!

How to make Chewy Chocolate Chip Granola Bars

To make this, you will need:

  • 6 tablespoons butter
  • 3 tablespoons brown sugar
  • 2/3 cup honey
  • 3 cups rolled oats
  • 1 3/4 cups rice krispies cereal
  • 1/4 cup hemp seeds
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips, divided

To make the bars, preheat the oven to 350F. Line a 9×9 pan with parchment paper.

In a saucepan, melt butter. Add brown sugar and honey and stir to combine. Remove from heat.

In a large bowl, combine, the oats, rice krispies, and hemp seeds. Add the honey mixture and toss to combine. Let cool for a couple of minutes and then stir in the chocolate chips.

Firmly press the mixture into the pan. Bake for 15 minutes.* Let cool completely and then refrigerate for 1 1/2 hours before cutting into bars. Keep refrigerated.

That’s it! The result will be an gooey, soft granola bar. For a firmer bar, pop the sliced bars back in the oven and bake for 10 more minutes.
