Crispy Oven Baked Fish Recipe

This easy and delicious Crispy Oven Baked Fish Dinner produces a wonderful fish and vegetable sheet pan meal in just 25 minutes! This method produces baked and breaded fish that is wonderfully crispy on the outside and tender on the inside, without any deep frying!

We love this Crispy Oven Baked Fish Recipe for a number of reasons. This simple sheet pan meal is incredibly easy to make, quick to do (just 25 minutes!), and creates and a healthy and satisfying meal.

This baked breaded fish recipe is also incredibly versatile. You can use pretty much any type of fish fillet you have on hand and even swap in your favorite vegetables and herbs. We have made this recipe with several types of fish over the years and it never disappoints.

The fish gets its crispiness from Panko bread crumbs. These breadcrumbs hold up so well to being baked and provide that desirable crunch despite not being fried.

This crispy baked fish recipe is one the whole family will love. Even picky eaters who don’t love fish are more inclined to try a breaded fish dinner. I mean, its breaded! If you are making this for kids, you can also cut up your fillets into smaller pieces, turning them into fish sticks.

I made this easy recipe with a side of asparagus to make it a complete, healthy dinner but you can either omit it or swap in different vegetables to suit your own preferences. Be sure to check out my Vegetable Substitutions section for ideas.

Key Ingredients for this Crispy Oven Baked Fish Recipe

  • Fish fillets: I like to use a mild white fish like fillet of sole, tilapia fillets, basa fillets, cod fillets or similar. Pretty much any fish fillet works with this recipe. Depending on the size and thickness of your fish, you may need to adjust the cook time. Fresh fish is always preferable but you can also use frozen fish that has been thawed.

  • Flour: used to help the breading stick to the fish. The fish is coated in the flour first to help ensure the egg wash sticks to it without sliding right off.

  • Seasoning: Old Bay seasoning, salt and black pepper.

  • Eggs: used to bind the panko mixture to the fillets of fish.

  • Panko breadcrumbs: The Panko breadcrumbs make the fish crispy and delicious. I prefer them to regular breadcrumbs because they tend to get crunchier and give the fish a crispy coating.

  • Olive oil: Added to breadcrumbs to help them crisp up and turn a beautiful golden brown.

  • Dried herbs: dried parsley and dill are added the Panko breadcrumbs to make them seasoned. You can swap in different dried herbs or even other seasonings like paprika, Parmesan cheese, or garlic powder if you like.

  • Asparagus: I added asparagus to have a vegetable side dish. This makes this a low carb meal (not keto, however, because there is flour and breadcrumbs used here). You can omit the vegetables altogether or swap in your own favorites. Check my Vegetable Substitutions section for other side dish ideas.

How to make this Baked Breaded Fish Dinner

Prepare the fish:

  1. Season the fish: Pat the fish fillets dry. Season them with salt and black pepper and set aside.
  2. Prepare the dredge: In a shallow dish, mix the flour and Old Bay seasoning. In a separate shallow dish, whisk the eggs. In a third shallow bowl, mix the panko breadcrumbs, dried parsley, dried dill, and olive oil.
  3. Bread the fish fillets: Working with one filet at a time, dip the piece of fish in the flour mixture, ensuring it is coated on both sides. Then place fillets into the egg mixture and finally dredge fish in the bread crumb mixture. Repeat with all of the other fillets.
  4. Transfer to a baking sheet: Arrange the fish fillets on the sheet pan lined with parchment paper.

Prepare the asparagus:

  1. Add the asparagus to the baking sheet in a single layer. [You can either place the asparagus onto one side of the sheet pan and the fish on the other or you can spread the asparagus around the fillets.]
  2. Drizzle the asparagus with olive oil and season with salt and pepper.
  3. Bake the fish and asparagus in the oven for about 12-15 minutes or until the fish is cooked through and the asparagus is fork tender. [Cook times will vary depending on the thickness of your fish fillets so adjust as needed. Use an instant read thermometer to check the temperature and prevent undercooked or overcooked fish. If your asparagus is ready before the fish, you can remove it and place it in a serving dish while the fish cooks.]

Vegetable Substitutions

In my recipe I used asparagus, but I often switch out the vegetables to use what I have on hand. This recipe can be made with a variety of roasted vegetable options. Depending on the vegetable you use, you may have to adjust the cook time (e.g. remove the fish from the pan if it is cooked while tougher veggies continue to roast). Some of my favourite substitutions include:

  • Zucchini: Slice zucchini into medallions and then drizzle them with olive oil and season with salt and pepper. You can also add dried herbs for added flavour like oregano, thyme, or basil. Roast the zucchini alongside the fillets. Roasted zucchini should cook in about the same time as your fillets (e.g. about 12-15 minutes) but this will depend on the size of your fillets.

  • Eggplant: Similar to zucchini. In fact, I have made this with a mix of zucchini and eggplant.

  • Broccoli: Roasted broccoli is another great option. It tends to require a bit more cook time (usually an extra 5 minutes or so) so you may have to remove the fish fillets and continue roasting the broccoli for additional time.

  • Green beans: Slender haricots verts will cook up in about the same time as your fish fillets, making this another great substitution. I simply season them the same way as asparagus and then serve with a squeeze of lemon.

Storing leftovers

Leftovers from this oven-fried fish recipe can be stored in an airtight container in the fridge for a couple of days. To reheat, I like to place them in the air fryer or in the oven until they are heated through.

What to serve with Healthy Crispy Oven Baked Fish

We love to enjoy this meal as it is, with just the fish and vegetables for a light, healthy meal. If you like, you can add additional side dishes. Some favorite sides include: Air Fryer Sweet Potato Fries or Crispy Air Fryer Greek Potatoes since they can be cooked in the air fryer in a bout the same time, freeing up the oven for this meal. Another great option is Creamy Whipped Potatoes.

A side of tartar sauce and lemon wedges so you can squeeze fresh lemon juice onto your dinner is also highly recommended.

Ingredients
  

For the fish:

  • 4 fish fillets (fillet of sole, tilapia, basa, or similar)
  • salt and pepper
  • 1/2 cup flour
  • 1 teaspoon Old Bay seasoning
