Grilled Corn Salsa is such an easy, healthy recipe to make and a great make ahead dish that keeps well in the fridge! Great as an app served with tortilla chips or as a side dish!
Grilled summer corn is one of my favourite summertime treats. While I absolutely loving eating grilled corn right off the cob, there are so many fun ways to use it in other dishes.
The corn salsa recipe I am sharing with you today is one of those fun ways to incorporate it!
I love this salsa served up with chips as a fun appetizer but it is also great served over top of grilled meats, fish, hot dogs or even tacos!
Ingredients in Grilled Corn Salsa
- 3 ears corn grilled and kernels cut off
- 1/2 red pepper finely chopped
- 1/2 red onion finely chopped
- 2 tablespoons cilantro finely chopped
- juice of 1 lime
- 1 tablespoon olive oil
- salt and pepper to taste
Simply toss all of these ingredients together and serve!
What to serve Grilled Corn Salsa with
While there are plenty of ways to enjoy this salsa, our favourites include:
- tortilla chips
- over grilled fish or other proteins
- on tacos
- as a topping for hotdogs

Grilled Corn Salsa
Ingredients
- 3 ears corn grilled and kernels cut off
- 1/2 red pepper finely chopped
- 1/2 red onion finely chopped
- 2 tablespoons cilantro finely chopped
- juice of 1 lime
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- Add all ingredients into a bowl and toss together. That’s it!
