Peaches are at their peak right now and I am loving it! Super sweet, juicy and just darn irresistible! I have been getting my fill of these tasty stone fruits and loving incorporating them into our meals!
This salad was a hit in our home! The sweetness from the peaches goes so well with the salty prosciutto and tangy goat cheese! I love the flavour combo and it is definitely not a boring salad!
This salad is best when stone fruit is in season (you really can’t beat the flavorful peaches!) and is one of those things I look forward to making first during the season!
How to make Peach, Prosciutto and Goat Cheese Salad
This salad is super easy to make! Simply toss all the ingredients in a bowl with a lovely homemade balsamic vinaigrette! To make this lovely peachy salad, you will need:
For the Salad:
- 5 cups lettuce, chopped
- 2 peaches, sliced
- 1/4 onion, sliced
- 3 slices prosciutto, cut into thirds
- 1/3 cup goat cheese
For the Balsamic Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- salt and pepper to taste
In a jar with a secure lid, add all the ingredients for the balsamic vinaigrette and shake to combine.
Add lettuce, peaches, and onion in a large bowl. Toss with vinaigrette and then top with goat cheese and prosciutto.
