Slow Cooker Creamy Lemon Chicken Thighs is an easy, healthy recipe that is so comforting and delicious! The chicken and creamy lemon sauce is lovely over rice or pasta!
Is there anything better than coming home to the delicious aroma of a ready made meal? I am so grateful for my slow cooker as it really is the hero that saves the day on a busy weeknight!
Working a full time job, enduring the long commute home and then having to prepare dinner can be stressful at times. I am absolutely a fan of recipes that make life easier and can get dinner on the table in good time! I am even more pleased when that meal is made with healthy ingredients that are good for me!
This recipe is easy to do! Before leaving for work, I quickly browned the chicken in a skillet and then let the slow cooker do the rest of the work. That’s it! You can serve the chicken with your favourite sides. I personally love this chicken over rice of noodles! They soak up the creamy lemony sauce and it is absolutely delightful!
How to make Slow Cooker Creamy Lemon Chicken Thighs
To make this meal, you will need:
- 8 chicken thighs, skinless
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 3 tablespoons butter, chopped into small pieces
- 1/2 cup chicken broth
- 1 teaspoon chicken bouillon
- 1/2 teaspoon onion powder
- zest of 2 lemons
- juice of 2 lemons
- salt and pepper
- 1 cup milk
- 2 tablespoons corn starch
- fresh parsley and Parmesan cheese, for garnish
Season chicken with salt and pepper. Heat olive oil in a skillet and brown chicken for a couple of minutes on both sides. You may have to do this in batches.
Place chicken in the slow cooker and sprinkle with the Italian seasoning, onion powder, and chicken bouillon. Add the chicken broth, butter, lemon zest and lemon juice. Put lid on and cook on low heat for 4 hours or high heat for 2 hours.
Remove chicken and set onto serving platter. Heat reserved juice from slow cooker in a saucepan. In a bowl, stir 2 tablespoons of cornstarch with 1/4 cup of milk. Add to the saucepan and add the remaining 3/4 cup of milk as well. Stir until the sauce begins to thicken. Pour over the chicken and sprinkle with parsley and Parmesan cheese.
