Tomato Spinach Salad with Fried Goat Cheese

This delicious Tomato Spinach Salad with Fried Goat Cheese is packed with fresh veggies and is taken to the next level with fried goat cheese!

When it comes to salads, the toppings make it or break it. So when I am making a salad, priority number one is to load it up with delicious add-ins that will take a plain, boring salad to the next level.

This is definitely one of those times.

The best part of this salad – fried goat cheese! Breaded goat cheese, to be exact. Definitely not the healthiest add-in but its on a bed of spinach, so it all balances out, right?

So. Much. Yum!

How to make fried goat cheese

You will need:

  • Goat cheese
  • Breadcrumbs
  • Panko bread crumbs
  • Seasoning: oregano, salt and pepper
  • 1 egg
  • vegetable oil for frying
  1. First, make the breading: In a bowl, add breadcrumbs, Panko breadcrumbs, oregano, salt and pepper. Stir to combine. In a separate bowl, add the egg and whisk.

  2. Form goat cheese medallions: Slice goat cheese into medallions.

  3. Coat the goat cheese: Dip into the egg and then into the breadcrumb mixture. The egg will help the breadcrumbs stick.

  4. Fry: Fry until golden brown, flipping to ensure both sides are cooked.

So simple but so delicious!

After that, its just a matter of arranging your salad. I included a simple dressing in the recipe card but feel free to swap in your favourite salad dressing.

Ingredients
  

For the fried goat cheese

  • 200 g goat cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup panko bread crumbs
  • 1/2 teaspoon oregano
  • salt and pepper
  • 1 egg
  • vegetable oil for frying

For the salad

  • 5 cups spinach
  • 2 tomatoes chopped into bite size pieces
  • 2 tablespoons onions sliced ,marinated (optional)
  • 1-2 tablespoons crumbled goat cheese (optional)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons vinegar
  • 1/2 teaspoon dried oregano
  • salt and pepper

Instructions
 

  • In a bowl, add breadcrumbs, panko breadcrumbs, oregano, salt and pepper. Stir to combine. In a separate bowl, add the egg and whisk.
  • Slice goat cheese into medallions. Dip into the egg and then into the breadcrumb mixture. Heat oil over medium heat and then add the breaded goat cheese. Fry until golden brown, flipping to ensure both sides are cooked.
  • In a jar with a secure lid add all the dressing ingredients and shake to combine.
  • In a large salad bowl, add the spinach, tomatoes and marinated onions. Add the dressing and toss to combine everything. Top with the fried goat cheese and additional crumbled goat cheese (optional).
