Summer salads are my favourite and this recipe I am sharing with you incorporates fresh summer corn. There is nothing better than fresh summer corn and it has been on repeat these last few weeks!
While this Easy Corn and Red Pepper Salad is a summertime favourite, it can easily be made year round using frozen corn.
Not only does it make a great side dish, but it doubles as a topping for grilled meats or tacos. The fresh flavours pair so well with these main dishes!
Ingredients in Easy Corn and Red Pepper Salad
- 4 cups corn kernels cooked
- 1 red pepper finely diced
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 3 basil leaves chopped finely
- salt and pepper
How to make this salad
- Place all ingredients into a bowl.
- Toss together and serve!
