Pizza Stuffed Mini Peppers

As far as snacks go, anything pizza flavoured is a guaranteed hit in our house. We have been snacking on these Pizza Stuffed Mini Peppers quite a bit lately. They are not only delicious, but so easy to make! With only 4 ingredients which we pretty much always have on hand, its a great go-to to satisfy snack cravings or to whip up an appetizer super quickly.

This recipe also makes a great after school snack too. It’s an easy way to get the kiddos involved in the kitchen since they can easily assemble their own stuffed peppers and have some fun in the process!

Ingredients in Pizza Stuffed Mini Peppers

  • mini peppers
  • pizza sauce
  • shredded mozzarella cheese
  • mini pepperoni (optional- you can leave this out for a vegetarian option)

How to make Pizza Stuffed Mini Peppers

  1. Preheat oven to 400F and line a baking sheet with parchment paper or foil.

  2. Arrange the halved mini peppers onto the baking sheet. Fill each mini pepper with about a teaspoon of pizza sauce.

  3. Top each mini pepper with the shredded cheese and a few mini pepperoni slices.

  4. Bake in the oven for about 10 minutes, or until the cheese has melted.

Storing Leftovers

As with most things, these are best when they are fresh out of the oven, however, you can definitely store leftovers for future snacking. Once they are cooled, store the pizza stuffed mini peppers in an airtight container and store in the fridge. If you have lots of leftovers, you can layer the peppers, just be sure to use parchment paper between layers to avoid them sticking together.

To heat them up, pop them in the oven, toaster oven or air fryer until warmed through and the cheese is melty again.

Can you make these in advance?

These Pizza Stuffed Mini Peppers can be made in advance, making them a perfect party appetizer. You can assemble the stuffed mini peppers following the steps in the recipe, then pop them in the fridge, covered with plastic food wrap, until you are ready to bake them. Then all you have to do is pop them in the oven and serve them up to your guests.
