Baked Parmesan Zucchini Fries

Crispy, crunchy zucchini fries flavoured with Parmesan cheese and herbs are seriously delicious! These fries are baked in the oven, making them a healthier recipe and the perfect snack or side for your meal!

If you aren’t turning your zuccs into fries, stop what you’re doing and get ready to take your zucchini game up a notch! With summer upon us and our zucchini supply coming in strong, we are using up these beauties in so many ways these days!

And what better way to use them up than to bread them and turn them into fries? It makes the perfect snack or side and is so easy to make too. My husband who doesn’t like zucchini requests I make these again and that is saying something!

While you can easily fry these up if you aren’t too worries about the oil, you really don’t have to. They bake up nicely in the oven for a nice healthy alternative and the seasoned breading gives the tender zucchini a nice crunch!

How to make Baked Parmesan Zucchini Fries

If you have zucchini’s on hand, you likely already have all the other ingredients to make these easy fries. To start, you will need:

  • 2 medium zucchini, cut into spears
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs, whisked
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dry oregano
  • 1/4 teaspoon dry basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

To make these fries, I start by preheating the oven to 425F and lining a baking sheet with parchment paper or lightly spray a nonstick cooking rack with oil.

I then mix panko breadcrumbs, Parmesan cheese, onion powder, paprika, oregano, basil salt and pepper in a bowl. In a separate bowl, I place the flour. In a third bowl, I whisk the eggs. I then dip each zucchini spear in the flour first, then the egg, and finally in the breadcrumb mixture and place the breaded zucchini on the metal rack.

These babies bake for about 15 minutes, until golden brown and then they are ready to be enjoyed! Super simple, delicious and healthy!

You can serve them as they are or with your favourite dip!
