These healthy Mocha Iced Coffee Popsicles are a refreshing sugar-free and dairy-free way to enjoy your coffee this summer! Made with coconut milk and naturally sweetened with dates, you can enjoy a rich treat that’s good for you!
Hot summer days and popsicles go hand in hand. It is one of my favourite ways to cool off in the heat and definitely a delicious way to do so!
These Mocha Iced Coffee Popsicles are definitely a delicious ways to cool off and get a little kick of caffeine while you are at it! They are one step better than an iced coffee, in my opinion.
These popsicles are also sugar-free They are naturally sweetened with dates instead for a healthier treat.
They are also dairy-free. Instead, I used coconut milk to add a creamy texture. This makes them vegan.
Ingredients in Mocha Iced Coffee Popsicles
- Coconut milk
- Pitted dates
- Cocoa powder
- Instant espresso powder
- Vanilla extract
How to make Mocha Iced Coffee Popsicles
- Add all ingredients in a saucepan and whisk together over medium heat for a few minutes. Let cool for several minutes.
- When it is cooled enough, transfer to a food processor and process together until it has a smooth consistency. You can also run the mixture through a sieve to ensure it is completely smooth.
- Pour into popsicle molds and freeze.
I opted to drizzle my popsicles with some melted chocolate (make sure it is dairy-free and vegan if you want to keep these vegan) but this is entirely optional.
