Vegan Chocolate Peanut Butter Fudgsicles

These healthy, vegan chocolate peanut butter fudgsicles are sugar-free and dairy-free! The popscicles are made with coconut milk and naturally sweetened with dates so you can enjoy a rich treat that’s good for you!

Delicious. That’s what these chocolatey, peanuty popsicles are. You can also call them healthy and vegan and sugar-free. Yes, they are all those things. But above all, they are delicious!

PB and chocolate are the best combination. Even better, I dare say, than PB and J. Sorry, J, you’re good and all but you just can’t compete with chocolate. No one can, as far as I’m concerned.

My husbands favourite desserts are those that combine chocolate and peanut butter. They’re his cryptonite and if he knows they are in the house, then he is eagerly devouring them without a thought to portion control or savouring each bite.

Because he loves the combination so much, I set out to make a healthier treat for him. And I found it! These vegan chocolate peanut butter fudgsicles are full of flavour but actually good for you. They’re made with healthy, wholesome ingredients and are way better for us than those chocolate treats he loves so much.

I don’t think they’ll last very long. But that’s no surprise.

How to make chocolate peanut butter fudgsicles

These popsicles are quite easy to make so get your popsicle mold ready and let’s get started!

You will need:

  • 1 500 ml can coconut milk
  • 9 pitted dates
  • 1/2 cup peanut butter
  • 5 tablespoons cocoa powder
  • 1/2 teaspoon vanilla extract

I start by adding all of the ingredients in a saucepan and whisking them together over medium heat until the peanut butter begins to melt and everything is combined. Then I let it cool for several minutes.

When it is cooled enough, I transfer it to a food processor and pulse it together until it has a smooth consistency. Then I pour it into popsicle molds and freeze them! That is it!

Although it is entirely optional, I melted some chocolate and drizzled the frozen pops with them and sprinkled them with some peanuts for a little something extra. Totally optional but a cute touch, I think!

Ingredients

  • When it is cooled enough, transfer to a food processor and process together until it has a smooth consistency.
  • Pour into popsicle molds and freeze.
  • Optional: if you like, you can melt some dark chocolate in the microwave and drizzle the frozen pops with them. You can also sprinkle them with crushed peanuts (do this quickly before the chocolate freezes so it sticks).
