Balsamic Roasted Strawberries

This easy Balsamic Roasted Strawberries recipe is delicious on its own or as a topping for yogurt, waffles, ice cream, toast or pretty much anything you can think of!

On our last grocery trip, we went a little overboard buying up berries! We love our berries around here! Whether snacking on them as they are, or baked in goods, berries are always a hit around here. Today, I decided to roast a pint of strawberries. It’s icecream season after all, and roasted strawberries are amazing on ice cream!

They’re also awesome on toast, yogurt bowls, and cheesy snacks (you can top wheels of baked brie with it, or spread goat cheese on crostini and top it with roasted strawberries). Any way you serve it, its delish!

This recipe is super easy to do and is definitely a fun way to change up how you eat strawberries!

How to make Balsamic Roasted Strawberries

Balsamic roasted strawberries require only 10 minutes of prep time and only 3 ingredients (yup, 3!) To make this recipe, you will need:

  • 2 lbs strawberries, hulled and halved (quarter larger berries)
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar

To make them, I start by preheating the oven to 400F and placing the sliced strawberries in a oven-safe baking dish.

Then, in a bowl, I whisk together the honey and balsamic vinegar and then drizzle it on top of the strawberries.

I pop it in the oven and bake it for 15 minutes. Then I give it a stir and then bake it for another 10 minutes.

That’s it! Before using it, I let it cool for a bit. The sauce will thicken as it cools and become more syrupy. Yum!
