Bruschetta Egg Sandwiches

These Bruschetta Egg Sandwiches combine soft-scrambled eggs, fresh tomatoes, and basil to make the perfect breakfast sandwich!

One glance at our summer garden, and you’d be making a safe assumption saying we are huge tomato fans in this house! It is easily one of our favourite veggies (I know, technically its a fruit but it seems weird to think of it that way)! We planted a ridiculous number of tomato plants for a household of 2 and so, we have been eating them for breakfast, lunch and dinner. No complaints here!

The other day, I decided to make myself a bruschetta and egg sandwich. I’d been craving bruschetta (and have made it twice this week already!) and so, having no patience at all, it became part of my breakfast sandwich!

I just had to make it again and share this idea with you all. I am sure some other genius somewhere has done this before but it truly never even crossed my mind before. Sure, slices of tomatoes are a part of my breakfast sandwiches regularly, but never quite like this. Not chopped up with fresh herbs and tossed with the perfect amount of olive oil and balsamic vinegar. Insert chef kiss here! Muah!

The result is fresh-tasting and delicious. It tastes like summer, plain and simple. And you need to make it too and enjoy every bite! Do it! If you love bruschetta like I do, you won’t regret it!

How to make Bruschetta Egg Sandwiches.

This sandwich is easy to make and can easily be done with your favourite bread choice. I chose a baguette as my bread vehicle of choice as it is sturdy enough to hold the bruschetta mixture, absorbing all of the olive oil and balsamic into its nooks and crannys without become a wet mess. Bagels work well with this too.

To make 2 hearty servings, you will need:

  • 1/2 french baguette, sliced in half, each piece sliced in half lengthwise to make a sandwich
  • 1/4 teaspoon olive oil
  • 2 slices mozzarella
  • 4 eggs, scrambled

To make the bruschetta topping, mix the following in a bowl:

  • 1 large tomato, seeds removed and finely diced
  • 1 tablespoon fresh basil, thinly sliced
  • a tablespoon onion, finely diced
  • 1 teaspoon olive oil, divided
  • 1 teaspoon balsamic vinegar
  • salt and pepper

Place 1/4 teaspoon olive oil in a bowl. Slice Brush olive oil on the insides of each baguette slice. Heat up a grill pan and grill bread slices until nicely toasted on both sides.

To assemble the sandwich, add a slice of mozzarella to the bottom half of each sandwich, spoon bruschetta topping on top and place half of the scrambled eggs on top of that. Top with the other half of the baguette slice to complete the sandwich. Enjoy!
