For quite some time, I have been working to perfect a sweet cookie that was grain-free and sugar-free (including no honey or maple syrup) and that feat is not easy! After some trial and error, I have landed on a cookie that is entirely healthy and free of grains and sugars, but still feels like a sweet, decadent treat!

These cookies are made with almond flour, sweetened with dates and have no butter or oil. How often do you come across a dessert that is genuinely good for you? Oh and did I mention they take less than 20 minutes to make, start to finish?

How to make Chocolate Almond Cookies

To make these cookies, you will need:

  • 12 pitted dates
  • 1 1/2 cups almond flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon almond slivers

Preheat oven to 350F. In a food processor, place dates and 1/3 cup water. Puree to form a paste.

Add all the other ingredients except the almond slivers. Pulse until combined.

Use a cookie scoop or spoon to form about 15 balls. Roll them between the palms of your hands to round them and then place them on a cookie sheet lined with parchment paper. Press down to flatten and place an almond sliver on top to decorate. The cookies will not spread much so they can be placed closely together.

Bake for 11 minutes.

That’s it!

I hope you enjoy these cookies!
