This ‘adult’ Grilled Cheese with Peach, Spinach, Prosciutto and Mint Pesto is an elevated take on the classic comfort food sandwich!
Melty cheese, fresh fruit, salty prosciutto and an herby pesto make this a flavourful sandwich! It has all the classic melty cheese you want from this classic comfort food but is elevated with the addition of an assortment of yummy extras! Sweet peaches, salty prosciutto, herby pesto. I mean, yes, yes, and YES!
I always have been a huge fan of grilled cheese sandwiches. As a kid, they consisted of white bread, processed cheese and butter. 3 ingredients and nothing more or less, please and thank you. And if you even tried to use regular cheese (you, know, real cheese), I wouldn’t even touch it.
Fast forward to today and boy have things changed! Processed cheese? No thanks! I’ll take the real stuff now. And don’t be afraid to get a little fancy. Smoked cheddar, brie, smoked gouda, you name it, I am game for it.
I am also game for adding healthy ingredients to these sandwiches! Spinach, blueberries, tomatoes. It gives me the excuse to eat them more often- they’re healthy now, afterall. So I’ll have one for dinner too, thanks! But seriously, the different combinations make this classic lunch even better!
Our garden is currently producing lots and lots of herbs which we have been turning into pesto. I decided to turn my mint into pesto too which is a nice change to a classic basil pesto. If you like mint, than you will love it too! It is a sweeter pesto with the addition of some honey (I think it works well to balance out the saltiness from the prosciutto). It goes nicely with the peaches in this sandwich too.
How to make Grilled Cheese with Peach, Spinach, Prosciutto and Mint Pesto
To make this grilled cheese sandwich, you will need:
- 2 slices of bread
- 2 slices of Gouda, Havarti, or your favourite melty cheese
- 1 peach, sliced
- 2 slices prosciutto
- 1/4 cup fresh baby spinach
- 1 tablespoons mint pesto
- 1 tablespoons butter
To make the mint pesto, you will need to pulse together the following in a food processor until smooth:
- 1 1/2 cups mint
- 1/4 cup pine nuts
- 1 tablespoon honey
- 2 tablespoons olive oil
- juice of 1/4 lime
To start, I lay out a slice of bread and spread on the mint pesto. Then I add the slices of cheese, spinach, prosciutto and peaches, making sure to spread everything evenly over the bread. I top it with the other slice of bread and butter both sides of the sandwich lightly.
Once the sandwich is assembled, I heat a pan on the stove at medium heat and add the remaining butter. I place the sandwich in the center of the pan and cover the pan with a lid (this will help trap the heat and ensure the cheese melts). The sandwich gets cooked on both sides for approximately 2-3 minutes, or until it browns lightly.
