Easy Homemade Cornbread

Fluffy, tender and lightly sweetened cornbread that is homemade and sure to be devoured within minutes! This easy cornbread recipe is made from scratch with ingredients you already have in your pantry!

If you have not tried making your own cornbread from scratch, I highly recommend it! While boxed mixes can be convenient, it is surprisingly easy to bake it from scratch and you’ll look like a pro too! I love making something with ingredients I can name, free of any preservatives or strange additives. If you can’t even pronounce the ingredient or locate it easily in the grocery store, its probably best to think twice before consuming it. That’s my rule, anyway.

The recipe I am sharing with you does not require any back-breaking, difficult work. Simply mix your ingredients, pour them into your pan and watch them transform into a delicious bread your whole family will drool over! And then fight over. Just kidding! The recipe makes about 9 servings but if I am honest, I probably consume more servings that I am willing to admit!

While the recipe is easy to do, there is one step that I feel is essential and shouldn’t be overlooked. Before mixing all your ingredients together, I highly recommend soaking your cornmeal in Greek yogurt and milk. This helps the cornmeal soften and bloom (is that the word for it? That’s what I am going with anyway.) It doesn’t take long. Just 10 minutes and you are good to go!

While I wouldn’t classify this recipe as healthy, I did make a few healthy swaps to my original recipe so its a bit better for you. Honey replaces refined sugar and the addition of Greek yogurt (hello, extra protein!) are some of the things I tell myself are better for me as I stuff my face! Now excuse me while I dust the crumbs off my screen…

Ingredients
  

  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 1 cup cornmeal
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup butter melted
  • 1/4 cup honey

Instructions
 

  • Preheat oven to 375F and grease a 9×9 baking dish with butter or oil. Mix Greek yogurt, milk and cornmeal in a large bowl and let sit for 10 minutes.
  • Meanwhile, mix the flour, baking soda, baking powder and salt in a bowl.
  • Stir the melted butter, egg, and honey to the cornmeal mixture. Add the dry ingredients and stir to combine.
  • Pour the mixture into the baking dish and bake until golden brown for approximately 25-30 minutes or until the toothpick inserted in the center comes out clean.
