This refreshing Pomegranate Margarita made with pomegranate juice, tequila and lime juice is served on the rocks!
I have always been partial to a nice margarita on the rocks. I have never liked the slushy versions of this drink- just a crisp clean cocktail served over ice is perfect for me! A classic margarita is deliciously perfect but versions with added flavours from a wide variety of fruits have always intrigued me. There are so many ways to add a twist to the classic and they are all fun and yummy!
I developed this particular cocktail recipe for Christmas but it truly is perfect for all year round! It’s gorgeous colour and the fact that pomegranates are readily available at grocery stores around Christmas makes it a natural fit for me. But the truth is, pom juice is something we purchase all year round. I am totally looking forward to mixing up a pitcher of these and enjoying them on the patio this summer!
The recipe I include is for 1 cocktail, but if you are enjoying these with others, you can easily multiply the recipe and whip it all up in a large pitcher for everyone to enjoy!
How to make a Pomegranate Margarita
To make this cocktail, you will need:
- sugar, to rim the glass
- 1 1/2 ounces pomegranate juice
- 1 1/2 ounces tequila, silver
- an ounce triple sec
- 1/2 ounce lime juice
- simple syrup or agave nectar for sweetening, to taste (optional)*
- ice
- pomegranate arils and lime wedges, for garnish (optional)
Pour sugar on a small plate. Line the rim of a glass with lime juice and then dip it into the sugar. Fill the glass with ice.
Fill a cocktail shaker (or jar with a secure lid) with ice and add the pomegranate juice, tequila, triple sec, lime juice, and simple syrup (if using).
Shake and then strain into the glass filled with ice. Garnish with pomegranate arils and lime wedges. Serve.
*Simple Syrup
Simple syrup can be purchased but it is so easy to make at home! To make your own, bring equal parts water and sugar to a simmer until sugar dissolves. Let cool.
If you want to add even more pomegranate flavour to this, you can also add some pomegranate arils or even replace some of the water with pom juice!
