I live for pumpkin spice season and am all about those lattes, desserts and anywhere else I can get my fill of all things pumpkin spiced! A quick search of all the pumpkin-y goodies on this site alone are proof of my obsession. And I haven’t even published all my recipes yet!
Since pumpkin spice season is upon us, its safe to say I am in pumpkin-loving heaven! Maybe its cause I am a fall baby but I love this season. The gorgeous leaves, the slight nip in the air, the cozy sweaters and warm spices. I. Love. It!
I am coming at you all today with my favourite new breakfast featuring, you guessed it, pumpkin! Oh yeah, these pumpkin spice waffles are where it is at right now and I have whipped up a triple batch -yup triple- so that I can freeze them up and enjoy them whenever I feel inclined. Which is always. So, yeah, they probably won’t last long!

Ingredients in Pumpkin Spice Waffles
As mentioned above, this recipe is super easy to make. It is also pretty darn healthy too! Except if you are like me, you might drown it in maple syrup and whipped cream. Balance, right?
To make these waffles, you will need:
- Whole wheat flour
- Pumpkin puree
- Baking powder
- Salt
- Eggs
- Milk
- Coconut oil or butter, melted
- Vanilla extract
- Maple syrup
- Cinnamon
- Pumpkin spice
How to make Pumpkin Spice Waffles
- Place all the waffle ingredients in a blender or food processor and blend until smooth. Let sit for 10 minutes.
- Heat waffle iron on medium heat and pour 1/2 cup of batter into the center of the iron. Close lid and cook for approximately 5 minutes. Cooking times and batter amounts will vary depending on your waffle iron. Follow the instructions for your waffle iron.
- Top waffles with a little whip cream, sprinkle with cinnamon and drizzle on that maple syrup! Enjoy!
