Smoked Salmon and Scrambled Eggs Breakfast Toasts

These Smoked Salmon and Scrambled Eggs Breakfast Toasts are a delicious and nutritious way to start off your day. Bonus: they are really easy to make!

These decadent little Smoked Salmon and Scrambled Eggs Breakfast Toasts are what I whipped up for brunch today. Although they feel indulgent and special compared to our regular weekday breakfasts, they are simple enough for a weekday too.

These toasts are super easy to do and little skill or time required! Essentially, if you can toast an English muffin and make some scrambled eggs, you are well on your way to making this delicious breakfast.

As simple as they are, somehow adding smoked salmon to this simple breakfast toast elevates it and makes it feel special. It also makes these extra delicious!

I added a little flair by adding a quenelle (a classic three-sided oval-esque shape made using two spoons) of cream cheese. No need to be so extra, though. You can simply spread the cream cheese on the English muffins instead.

Components of the perfect Smoked Salmon and Scrambled Eggs Breakfast Toasts

  • English muffins: The base of these breakfast toasts, Alternatively, you can use sliced and toasted bread.

  • Olive oil: to cook the scrambled eggs in. You can substitute a pat of butter.


  • Eggs: scrambled eggs.

  • Smoked salmon

  • Cream cheese
  • Cherry tomatoes

  • Seasoning and herbs: salt, pepper and fresh dill.

Making these Smoked Salmon Breakfast Toasts

  1. Toast the muffins: Start by toasting the English muffins.

  2. Make the scrambled eggs. Heat a teaspoon of olive oil in a pan and add the eggs. Cook, stirring often until scrambled eggs are fully cooked.

  3. Assemble the toasts: Note: If you are not adding a dollop or quenelle of cream cheese on top, start by spreading the cream cheese on the English muffins. Top each English muffin half with the scrambled eggs and a slice of smoked salmon. Add a dollop of cream cheese on top and add the cherry tomatoes. Season with salt and pepper and dill.

That’s it. Aside from the little cream cheese quenelles (which are optional), its all super simple!

  • 2 slices smoked salmon
