Summer Fruit Salad with Fresh Mint

This colourful combination of fruits is drizzled with a citrus honey dressing and tossed with fresh mint, making a refreshing summer fruit salad! Enjoy it as a cool and refreshing treat or as a topping for pancakes or waffles!

I am always down for a fruit salad whether on its own, or served as a topping for waffles or pancakes.

Especially if its on top of waffles and pancakes, actually!

I love a good fruit salad! They’re easy to make, refreshing, and healthy too, making them a go-to way to get in our fruit servings. They’re also perfect for serving up to guests after dinner and that is just what we did with this salad!

Not only does this colourful bowl look lovely when served up to guests, I especially love that I can make it in advance and let it sit in the fridge, ready to go when I need it! It actually tastes better, I think, as it sits in the fridge for a few hours and the fruit has time to absorb some of the yummy citrus honey dressing!

Ingredients in my Summer Fruit Salad

  • Berries: blueberries and strawberries (sliced) were used in this salad. You can easily swap in other berries too such as raspberries and blackberries.

  • Grapes: I used green grapes but you can definitely use red grapes.

  • Kiwi fruits: peeled and sliced into bite sized pieces. I used a cute star-shaped cookie cutter to make them extra adorable but that is definitely not necessary.

  • Peaches: sliced into smaller pieces.

  • Dressing: honey and orange juice. These ingredients are mixed together and then poured over the fruit to make it extra delicious.

  • Mint: chop large mint leaves. If you have small mint leaves, you can add them on top as a cute garnish.

How to make Summer Fruit Salad with Fresh Mint

This recipe is as easy as 1-2-3!

  1. Prep the fruit: Place washed and chopped fruit in a large bowl.

  2. Make the dressing: Combine honey and orange juice in a jar with a secure lid. Close lid and shake to combine well.

  3. Toss together: Pour dressing over fruit and toss together. Sprinkle with fresh mint.

Tips and Substitutions

  • Cut your fruit into bite-sized pieces for easy eating.

  • Choose good quality, in-season fruit.

  • You can make this salad in advance but not too far in advance. If I am making this for a dinner party, I like making it earlier in the day and then storing it in the fridge. This makes it easier to just whip out after your dinner, without having to fuss around in the kitchen. Be wary of making this too far in advance, though. Depending on the freshness of your fruit (and particularly when it comes to berries), you don’t want them to start getting mushy.

  • Swap in a different sweetener: I use honey in my dressing but you can easily swap it out for sugar, an artificial sweetener or maple syrup.

  • Swap in different fruit to suit your preferences: This recipe is easily customizable and you can have fun and play around with the recipe to suit your own taste preferences or the fruit you have on hand. There are a number of other fruit options I often add into my fruit salads. These include, but are not limited to:
    • cherries (pitted)
    • raspberries
    • blackberries
    • apricots
    • clementines
    • plums
    • mango
    • pineapple
  • Make it colourful! I purposely chose fruit with contrasting colours that look beautiful tossed together in a bowl. If you are swapping out different fruit, keep this in mind for a beautiful presentation.

Storing fruit salad:

Fruit salad should be stored in the fridge for maximum freshness. Cover the bowl with plastic food wrap or store it in an airtight container in the fridge until you are ready to serve.

If you have leftovers, they should be returned to the fridge and stored in the same manner.

How to serve fruit salad:

Fruit salad is great on its own as a snack or post-meal dessert. You can serve it just as it is or with a scoop of whip cream or ice cream on top.

It also makes a great topping for pancakes and waffles. It is almost always included in my brunch spreads!
