My husband and I are both huge fans of this chicken recipe and it is so easy to make, it’s the perfect weeknight meal! The chicken is perfectly cooked and moist and the sauce, oh the sauce!
This creamy spinach chicken recipe is super satisfying and we like to serve it up with veggies on the side…which also get a bit of sauce, cause, why not? No carbs needed for this dish as it is rich enough to keep you satisfied for hours without them.
If you want to add carbs though, you are more than welcome to add some! Potatoes on the side would work well here as would adding some pasta or gnocchi to the sauce to make it a complete dish! The choice is yours and whatever you choose, I am sure you’ll be left feeling totally satisfied!
How to make Creamy Spinach Chicken
To make this dish, you will need:
For the chicken:
- 4 chicken breasts
- 1 tablespoon grape seed oil (or your favourite cooking oil)
- salt and pepper
For the Creamy Spinach Sauce:
- 1 teaspoon olive oil
- 1 lb fresh spinach
- a brick of cream cheese (250g or about 8oz)
- 1/3 cup plain Greek yogurt
- 1 cup each Parmesan cheese and shredded mozzarella cheese
- 1 tablespoon dried onion flakes
- salt and pepper to taste
- 1/2 cup chicken broth
Preheat oven to 350F and line a baking sheet with parchment paper.
Heat oil in a skillet over medium heat. Season the chicken with salt and pepper and add the chicken breasts to the skillet. Cook for a few minutes on each side to brown. Transfer to the baking dish and cook in the oven until the chicken is cooked through (approx. 10 minutes although time will depend on thickness of your chicken breasts. Use a meat thermometer to check the internal temperature).
Roughly chop the spinach and blanch it in boiling water for about 1 minute. Remove and place in an ice bath. Place it in a cheese cloth and squeeze out the excess water.
In a large bowl, add the creamy spinach ingredients except the chicken broth.
Wipe down skillet. Heat the chicken broth in a skillet and add the spinach ingredients to it. Cook, stirring until the cheese has melted.
Add the cooked chicken to the skillet. Simmer for a few minutes. Serve, spooning sauce over each chicken breast.
